Hello vegetarians and non-vegetarians!
When I first became a vegetarian I did not research many recipes because I figured being the amazing cook that I am (I despise cooking) I could just come up with my own. This was a mistake. This was wrong! Why? You ask. because I was hungry ALL THE TIME! Until I started eating a lot of veggies at every meal.
I started making skillets for breakfast, lunch, and dinner. I do not like to spend a lot of my time in the kitchen and like spending money on food even less. These skillets, however, are super simple, relatively inexpensive, delicious, and you can keep switching it up!
Skillets are ready in minutes and do not require a lot of preparations. Usually I would take all the vegetables in my refrigerator, cut them up, and fry them in one pan with a little oil or butter. Then eat!
I have tried many different combinations, and some were definitely better than others. Here are some of the favorites:
-Broccoli, yellow/orange bell pepper, carrots, tomato.
-Zucchini, onion, red bell pepper.
-Potato, leeks, tomato
The possibilities are endless. Do not be afraid to try new and even odd combinations because they can turn out to be delicious. Also do not forget the herbs and spices, they definitely help improve any dish!
How can you make a good meal even greater? Well you can do a lot with these skillets. You can add eggs, which will add extra proteins. Secondly you do not have to eat it as a skillet! Throw all of this into a wrap, and heat the wrap up for a few minutes in the same pan and BAM! you’ve got a delicious, healthy, vegetarian wrap. Also you can put all of this on bread and have a delicious veggie sandwich. I can go on and on about how great I believe these skillets are, but I think you guys get the point.
